Canadian bacon, as opposed to regular bacon, is “back bacon”, meat taken from the back as distinguished from other bacon, made from pork belly or other cuts.
I prefer turkey bacon, myself…much more healthier. I can have regular bacon or sausage…but am trying to cut back on it.
Turkey bacon is cardboard.

If its for dinner, it depends on what we are cooking. If its breakfast, maple bacon cut up and tossed into an omelet.
Side note-wow crimson…just wow.
